- 1 package (9–12 oz) cheese tortellini
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup tomato sauce
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese
- 2 tbsp olive oil
- Optional: chopped fresh basil or parsley for garnish

- Cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
- Add minced garlic and cook 1 minute more until fragrant.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
- Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
- Add cooked tortellini to the skillet and toss to coat in the sauce.
- Sprinkle shredded mozzarella cheese on top, cover, and let sit 2–3 minutes to melt.
- Garnish with chopped basil or parsley if desired and serve warm.
Notes
For extra flavor, add a pinch of red pepper flakes or a splash of balsamic vinegar. You can substitute ground turkey or chicken for a lighter version.
