  • 1 lb beef stew meat, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup pearl barley
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • Salt, to taste
  • Optional garnish: fresh parsley

  1. Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides, about 5–6 minutes. Remove and set aside.
  2. Add onion, garlic, carrots, and celery; sauté 4–5 minutes until softened.
  3. Return beef to the pot. Add beef broth, thyme, parsley, salt, and black pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer 30–35 minutes until beef is tender.
  5. Add pearl barley and cook 25–30 minutes until barley is tender.
  6. Adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.

Notes

For extra depth of flavor, brown the beef in batches and deglaze the pan with a little beef broth before adding vegetables.
