- 1 lb beef stew meat, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup pearl barley
- 6 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- Salt, to taste
- Optional garnish: fresh parsley

- Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides, about 5–6 minutes. Remove and set aside.
- Add onion, garlic, carrots, and celery; sauté 4–5 minutes until softened.
- Return beef to the pot. Add beef broth, thyme, parsley, salt, and black pepper. Bring to a boil.
- Reduce heat, cover, and simmer 30–35 minutes until beef is tender.
- Add pearl barley and cook 25–30 minutes until barley is tender.
- Adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
Notes
For extra depth of flavor, brown the beef in batches and deglaze the pan with a little beef broth before adding vegetables.
