  • 1/2 cup BBQ sauce (your favorite)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 4 large flour tortillas
  • 1/4 cup red onion, thinly sliced (optional)
  • 1 tbsp butter or oil (for cooking)
  • Fresh cilantro, chopped (optional)
  • Ranch or extra BBQ sauce, for dipping

Instructions

  1. In a bowl, toss the shredded chicken with BBQ sauce until coated.
  2. Heat a large skillet over medium heat with a little butter or oil.
  3. Place one tortilla in the skillet and sprinkle a layer of cheese on half of it.
  4. Add a generous scoop of BBQ chicken, onions, and cilantro if using.
  5. Top with another layer of cheese and fold the tortilla over.
  6. Cook 2–3 minutes per side until golden and crispy.
  7. Repeat with remaining tortillas.
