  • 1 lb salmon fillet, cut into 1-inch cubes
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 12 tbsp sriracha (adjust for heat)
  • 1 tsp honey
  • Salt and pepper, to taste
  • Cooking spray or oil for baking/frying
  • Optional garnish: chopped green onions or sesame seeds

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper, or heat oil in a skillet for pan-frying.
  2. Pat salmon cubes dry and season lightly with salt and pepper.
  3. Set up a breading station: one bowl with flour, one with beaten eggs, one with panko breadcrumbs.
  4. Coat each salmon piece in flour, then egg, then panko breadcrumbs.
  5. Place on prepared baking sheet and lightly spray with cooking oil, or pan-fry until golden and cooked through, about 3–4 minutes per side.
  6. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make bang bang sauce.
  7. Toss cooked salmon bites in the sauce until evenly coated.
  8. Garnish with green onions or sesame seeds if desired and serve immediately.

Notes

For extra crispiness, bake salmon bites on a wire rack over the baking sheet. Adjust sriracha to control spiciness.
