- 1 lb salmon fillet, cut into 1-inch cubes
- 1/2 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup mayonnaise
- 3 tbsp sweet chili sauce
- 1–2 tbsp sriracha (adjust for heat)
- 1 tsp honey
- Salt and pepper, to taste
- Cooking spray or oil for baking/frying
- Optional garnish: chopped green onions or sesame seeds

- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper, or heat oil in a skillet for pan-frying.
- Pat salmon cubes dry and season lightly with salt and pepper.
- Set up a breading station: one bowl with flour, one with beaten eggs, one with panko breadcrumbs.
- Coat each salmon piece in flour, then egg, then panko breadcrumbs.
- Place on prepared baking sheet and lightly spray with cooking oil, or pan-fry until golden and cooked through, about 3–4 minutes per side.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make bang bang sauce.
- Toss cooked salmon bites in the sauce until evenly coated.
- Garnish with green onions or sesame seeds if desired and serve immediately.
Notes
For extra crispiness, bake salmon bites on a wire rack over the baking sheet. Adjust sriracha to control spiciness.
