- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs, beaten
- Vegetable oil for frying
- 1/4 cup mayonnaise
- 3 tbsp sweet chili sauce
- 1–2 tsp sriracha (adjust to taste)
- Optional garnish: chopped green onions or sesame seeds

- In a medium bowl, combine flour, cornstarch, salt, and pepper.
- Dip chicken pieces into beaten eggs, then coat with the flour mixture.
- Heat vegetable oil in a skillet or deep fryer over medium-high heat.
- Fry chicken in batches until golden brown and cooked through, about 4–5 minutes per batch. Drain on paper towels.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha.
- Place fried chicken in a large bowl and toss with the sauce until evenly coated.
- Garnish with chopped green onions or sesame seeds if desired and serve immediately.
Notes
Adjust the sriracha to your preferred spice level. These bites are best served fresh but can be kept warm in a low oven for a short time before serving.
