  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chocolate chips or nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas and melted butter.
  3. Whisk in the sugar, beaten egg, and vanilla extract.
  4. Stir in the baking soda, salt, and cinnamon if using.
  5. Add the flour and mix gently until just combined—do not overmix.
  6. Fold in chocolate chips or nuts if desired.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For maximum flavor, use very ripe bananas with brown spots. You can add mix-ins like walnuts, pecans, or chocolate chips. Store the loaf wrapped at room temperature for up to 3 days or freeze slices for quick breakfasts.
