- 3 ripe bananas, mashed
- ⅓ cup melted butter
- ¾ cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 ½ cups all-purpose flour
- Optional: ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, mash the bananas. Stir in the melted butter.
- Mix in sugar, egg, and vanilla extract.
- Sprinkle baking soda and salt over the mixture, then stir in flour until just combined.
- Fold in nuts or chocolate chips, if using.
- Spoon batter into muffin cups, filling each about ¾ full.
- Bake for 20–25 minutes, or until a toothpick comes out clean.
- Let cool in pan for 5 minutes, then transfer to a wire rack.
