  • ¾ cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 ½ cups all-purpose flour
  • Optional: ½ cup chopped walnuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, mash the bananas. Stir in the melted butter.
  3. Mix in sugar, egg, and vanilla extract.
  4. Sprinkle baking soda and salt over the mixture, then stir in flour until just combined.
  5. Fold in nuts or chocolate chips, if using.
  6. Spoon batter into muffin cups, filling each about ¾ full.
  7. Bake for 20–25 minutes, or until a toothpick comes out clean.
  8. Let cool in pan for 5 minutes, then transfer to a wire rack.
