Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan and set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. In a large bowl, mix together sugars, pumpkin puree, eggs, milk, oil, and vanilla until well combined.
  4. Add dry ingredients to wet ingredients and mix until just combined — do not overmix.
  5. Spoon or pipe batter into the donut pan, filling each cavity about 3/4 full.
  6. Bake for 14–16 minutes, or until a toothpick inserted comes out clean.
  7. Let donuts cool for 5 minutes, then remove from pan and cool on a wire rack.
  8. Optional: Brush warm donuts with melted butter and dip in cinnamon sugar for a sweet finish.

Notes

Don’t overbake or they’ll dry out. These store well in an airtight container for 2–3 days or can be frozen up to 2 months.
