These Baked Pumpkin Donuts are soft, spiced, and topped with cinnamon sugar — the perfect fall treat that’s easy to make in under 30 minutes.

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup canned pumpkin puree
- 2 large eggs
- 1/4 cup milk
- 1/4 cup vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a donut pan and set aside.
- In a medium bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- In a large bowl, mix together sugars, pumpkin puree, eggs, milk, oil, and vanilla until well combined.
- Add dry ingredients to wet ingredients and mix until just combined — do not overmix.
- Spoon or pipe batter into the donut pan, filling each cavity about 3/4 full.
- Bake for 14–16 minutes, or until a toothpick inserted comes out clean.
- Let donuts cool for 5 minutes, then remove from pan and cool on a wire rack.
- Optional: Brush warm donuts with melted butter and dip in cinnamon sugar for a sweet finish.
Notes
Don’t overbake or they’ll dry out. These store well in an airtight container for 2–3 days or can be frozen up to 2 months.
