Instructions
- In a bowl, whisk eggs with salt and pepper. Scramble in a skillet over medium heat until just set. Remove from heat.
- Lay out tortillas and evenly distribute scrambled eggs, chopped bacon, and shredded cheese on one half of each tortilla.
- Fold the tortillas in half over the filling.
- In a large skillet, heat butter over medium heat. Cook each quesadilla 2β3 minutes per side until golden brown and cheese is melted.
