  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup bourbon
  • 1/2 cup caramel sauce
  • 6 slices cooked bacon, chopped
  • Optional: extra caramel sauce for drizzling

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the springform pan to form the crust.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.
  5. Pour cheesecake batter over the prepared crust.
  6. Bake for 50–60 minutes, or until the center is almost set but slightly jiggly.
  7. Remove from oven and allow to cool for 10 minutes. Drizzle bourbon and caramel sauce over the cheesecake, then sprinkle with chopped bacon.
  8. Refrigerate for at least 4 hours or overnight before serving.
  9. Optional: drizzle extra caramel sauce over slices before serving.
