- 3 (8 oz) packages cream cheese, softened

- 1/2 cup sour cream
- 1/4 cup bourbon
- 1/2 cup caramel sauce
- 6 slices cooked bacon, chopped

- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the springform pan to form the crust.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.
- Pour cheesecake batter over the prepared crust.
- Bake for 50–60 minutes, or until the center is almost set but slightly jiggly.
- Remove from oven and allow to cool for 10 minutes. Drizzle bourbon and caramel sauce over the cheesecake, then sprinkle with chopped bacon.
- Refrigerate for at least 4 hours or overnight before serving.
- Optional: drizzle extra caramel sauce over slices before serving.
