Description
This Autumn Harvest Salad combines crisp Honeycrisp apples, salty feta, crunchy nuts, and a honey vinaigrette for a fresh and festive fall side dish.
Ingredients

- 2 Honeycrisp apples, thinly sliced
- 6 cups mixed greens (arugula, spinach, or spring mix)
- 1/2 cup crumbled feta cheese
- 1/3 cup dried cranberries
- 1/3 cup candied pecans or walnuts
- 1/4 small red onion, thinly sliced
- Honey Vinaigrette:
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt & pepper, to taste
Instructions
- In a large salad bowl, arrange the mixed greens.
- Top with sliced Honeycrisp apples, crumbled feta, dried cranberries, nuts, and red onion.
- In a small jar, whisk or shake together olive oil, apple cider vinegar, honey, Dijon, salt, and pepper.
- Drizzle the dressing over the salad just before serving and toss gently.
Notes
Best served immediately after tossing with dressing. For extra flavor, add roasted butternut squash or pumpkin seeds. Makes a beautiful holiday side salad!
