  • 1/4 cup red onion, finely diced
  • 1/2 cup roasted butternut squash cubes (optional, for extra fall flavor)
  • Dressing:
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup or honey
  • Salt and black pepper, to taste

Instructions

  2. In a small bowl or jar, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper until smooth.
