- 12 oz spaghetti or fettuccine
- 6 slices bacon or pancetta, diced
- 3 large egg yolks + 1 whole egg
- 1 cup finely grated Parmesan cheese
- 1 tsp freshly ground black pepper
- Salt for pasta water
- Optional: parsley for garnish

- Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
- In a skillet, cook bacon until crispy. Remove skillet from heat.
- In a bowl, whisk together egg yolks, whole egg, Parmesan, and black pepper.
- Add hot pasta to skillet with bacon and toss.
- Quickly pour in egg mixture off the heat, tossing constantly to create a creamy sauce.
- Add reserved pasta water a little at a time until desired creaminess is reached.
- Garnish with parsley and extra Parmesan if desired, then serve immediately.
Notes
Removing the skillet from heat before adding eggs prevents scrambling. For an authentic taste, avoid cream.
