  • 12 oz spaghetti or fettuccine
  • 6 slices bacon or pancetta, diced
  • 3 large egg yolks + 1 whole egg
  • 1 cup finely grated Parmesan cheese
  • 1 tsp freshly ground black pepper
  • Salt for pasta water
  • Optional: parsley for garnish

  1. Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
  2. In a skillet, cook bacon until crispy. Remove skillet from heat.
  3. In a bowl, whisk together egg yolks, whole egg, Parmesan, and black pepper.
  4. Add hot pasta to skillet with bacon and toss.
  5. Quickly pour in egg mixture off the heat, tossing constantly to create a creamy sauce.
  6. Add reserved pasta water a little at a time until desired creaminess is reached.
  7. Garnish with parsley and extra Parmesan if desired, then serve immediately.

Notes

Removing the skillet from heat before adding eggs prevents scrambling. For an authentic taste, avoid cream.
