- 2 cups peeled and diced apples (Granny Smith or Honeycrisp)
- 1/4 cup granulated sugar
- 1 tbsp brown sugar
- 1 tsp ground cinnamon
- 1 tbsp all-purpose flour
- 1 tsp lemon juice
- 1 package refrigerated pie crusts (or homemade)
- 1 egg (for egg wash)
- 1 tbsp milk
- Coarse sugar (optional, for topping)
Instructions
- Prepare the filling: In a small pan, cook apples with sugars, cinnamon, flour, and lemon juice over medium heat for 5β6 minutes until soft. Let cool completely.
- Preheat oven: Set oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
- Assemble the hand pies: Roll out pie dough and cut circles (about 4 inches). Add 1 tablespoon of filling to each, then top with another circle or fold in half and seal edges with a fork.
- Brush and bake: Mix egg with milk and brush over the tops. Sprinkle with coarse sugar if desired. Bake for 18β20 minutes or until golden brown.
