- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream or Greek yogurt
- 1 1/2 cups all-purpose flour

- 1/4 tsp baking soda
- 1/4 tsp salt
- For the Apple Filling:
- 2 medium apples, peeled and chopped
- 1/2 tsp cinnamon
- 1 tbsp brown sugar
- For the Crumb Topping:
- 1/2 cup flour
- 1/3 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup unsalted butter, melted
- For the Cinnamon Apple Drizzle:
- 1/2 apple, finely grated or puréed
- 1/4 cup powdered sugar
- 1/2 tsp cinnamon
- 1–2 tsp milk (as needed)
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.
- Make the Crumb Topping: In a small bowl, mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly. Set aside.
- Prepare the Apple Filling: Toss chopped apples with cinnamon and brown sugar. Set aside.
- Make the Cake Batter: Cream butter and sugar. Beat in eggs and vanilla. Mix in sour cream. In a separate bowl, whisk flour, baking powder, soda, and salt. Gradually add dry to wet mixture.
- Spread half the batter in the pan. Layer with cinnamon apples. Top with remaining batter and spread evenly. Sprinkle crumb topping over entire cake.
- Bake 35–40 minutes or until a toothpick comes out clean. Cool slightly.
- Make the Drizzle: Mix grated apple, powdered sugar, cinnamon, and just enough milk to make a pourable glaze. Drizzle over the warm or cooled cake before serving.
Notes
Best enjoyed warm with coffee or tea. Use tart apples like Granny Smith for balanced flavor. Drizzle can also be made with apple cider for a fall twist.
