Description

Moist apple crumb cake with a crunchy cinnamon crumble and a luscious cinnamon apple drizzle on top. Perfect for breakfast, brunch, or dessert during fall!


Ingredients

    • Cake:
    • 2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup sour cream or plain yogurt
    • 2 cups peeled and diced apples

 

    • Crumb Topping:
    • 1/2 cup all-purpose flour
    • 1/2 cup brown sugar
    • 1/4 cup unsalted butter, cold and cubed
    • 1 teaspoon cinnamon

 

  • Cinnamon Apple Drizzle:
  • 1/2 cup powdered sugar
  • 23 tablespoons apple cider or milk
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla.
  4. Alternately mix in dry ingredients and sour cream until combined. Fold in diced apples.
  5. Pour batter into prepared pan.
  6. For crumb topping, mix flour, brown sugar, cinnamon, and butter until crumbly. Sprinkle evenly over batter.
  7. Bake 40–45 minutes, until a toothpick inserted comes out clean.
  8. While cake cools, whisk together powdered sugar, apple cider, and cinnamon to make drizzle.
  9. Drizzle over cooled cake before serving.

Notes

Store covered at room temperature for 2 days or refrigerate up to 5 days. Optional: serve with a dollop of whipped cream or vanilla ice cream.
