- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 6β8 tablespoons ice water
- 6 cups thinly sliced apples (Granny Smith or Honeycrisp)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 tablespoon milk
- Coarse sugar for topping
Instructions
- In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough comes together.
- Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat oven to 400Β°F (200Β°C). In a bowl, toss sliced apples with both sugars, flour, cinnamon, nutmeg, and lemon juice.
- Roll out one dough disk and place it in a 9-inch pie dish. Add the apple filling evenly.
- Roll out the second dough disk and place it over the filling. Trim and crimp the edges, then cut small slits for steam to escape.
- Brush the top with beaten egg and milk, and sprinkle with coarse sugar.
- Bake for 45β50 minutes or until the crust is golden brown and the filling is bubbly. Cool for at least 2 hours before serving.
