These Air Fryer Beef Empanadas are golden, crispy pockets filled with seasoned ground beef and vegetables. Quick to make in the air fryer, they’re perfect as appetizers, snacks, or party treats.

- 1 lb ground beef
- 1 small onion, finely diced
- 1/2 red bell pepper, finely diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder (optional)
- Salt and pepper to taste
- 1 package empanada dough discs (about 12 discs)
- 1 egg, beaten (for egg wash)
- Optional: chopped cilantro for garnish

- Preheat the air fryer to 370°F (188°C).
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add onion, bell pepper, garlic, cumin, paprika, chili powder, salt, and pepper. Cook 3–4 minutes until vegetables are soft.
- Remove from heat and let filling cool slightly.
- Place a spoonful of filling in the center of each empanada disc. Fold over and seal edges with a fork.
- Brush empanadas with beaten egg for a golden finish.
- Place empanadas in the air fryer basket in a single layer. Cook 8–10 minutes until golden brown, flipping halfway through if necessary.
- Garnish with chopped cilantro if desired and serve warm.
Notes
Do not overfill the empanadas to avoid bursting. These can be frozen uncooked and cooked in the air fryer directly from frozen, adding a few extra minutes to cooking time.
