- 1 lb ground beef (or ground turkey, optional)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 (10 oz) can Rotel (tomatoes with green chilies)
- 1 packet taco seasoning (or 2 tbsp homemade blend)
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, cilantro
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add all canned ingredients and taco seasoning to the pot. Stir until well combined.
- Bring soup to a boil, then reduce heat and simmer for 15–20 minutes to let flavors meld.
- Taste and adjust seasoning with salt and pepper.
- Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.
Notes
For a vegetarian version, skip the meat and use vegetable broth. This soup is freezer-friendly and perfect for meal prep!
