- 1 lb ground beef
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp soy sauce
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1/2 cup soy sauce (for sauce)
- 1/4 cup brown sugar
- 1/4 cup water
- 2 cloves garlic, minced (for sauce)
- 1 tsp cornstarch mixed with 1 tbsp water (optional for thickening)
- Optional garnish: green onions, sesame seeds

- Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Make meatballs: In a bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, soy sauce, and pepper. Mix until combined. Form into 1–1.5 inch meatballs and place on baking sheet.
- Bake meatballs: Bake for 15–20 minutes until cooked through and lightly browned.
- Prepare sauce: In a skillet, combine soy sauce, brown sugar, water, and garlic. Bring to a simmer. If desired, stir in cornstarch slurry to thicken.
- Coat meatballs: Add baked meatballs to the skillet and toss to coat in sauce. Simmer 2–3 minutes to heat through.
- Serve: Garnish with green onions and sesame seeds. Serve over rice or noodles if desired.
Notes
For extra flavor, add a pinch of red pepper flakes for heat. These meatballs can also be pan-fried instead of baked for a crispier exterior.
