- 2 cups fresh or frozen strawberries, hulled
- 2–3 tbsp honey or maple syrup (adjust for sweetness)
- 1 tsp lemon juice
- Optional: 1/2 tsp vanilla extract

- Preheat oven to 170°F (75°C) or the lowest setting.
- Line a baking sheet with parchment paper or a silicone baking mat.
- In a blender or food processor, puree strawberries until smooth.
- Add honey and lemon juice (and vanilla if using) and blend until combined.
- Pour the puree onto the prepared baking sheet and spread evenly to about 1/8-inch thickness.
- Bake for 3–4 hours, or until the puree is no longer sticky to the touch and peels easily from the parchment.
- Allow to cool completely, then cut into strips using kitchen scissors or a knife.
- Roll up the strips in parchment paper or plastic wrap and store in an airtight container.
Notes
For a chewier texture, bake slightly less; for firmer roll-ups, bake a bit longer. You can also experiment with other fruits like mango, raspberry, or blueberry for variety.
