  • 2 cups fresh or frozen strawberries, hulled
  • 23 tbsp honey or maple syrup (adjust for sweetness)
  • 1 tsp lemon juice
  • Optional: 1/2 tsp vanilla extract

  1. Preheat oven to 170°F (75°C) or the lowest setting.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. In a blender or food processor, puree strawberries until smooth.
  4. Add honey and lemon juice (and vanilla if using) and blend until combined.
  5. Pour the puree onto the prepared baking sheet and spread evenly to about 1/8-inch thickness.
  6. Bake for 3–4 hours, or until the puree is no longer sticky to the touch and peels easily from the parchment.
  7. Allow to cool completely, then cut into strips using kitchen scissors or a knife.
  8. Roll up the strips in parchment paper or plastic wrap and store in an airtight container.

Notes

For a chewier texture, bake slightly less; for firmer roll-ups, bake a bit longer. You can also experiment with other fruits like mango, raspberry, or blueberry for variety.
